Key Ingredients for Egg and Green Onion Crepe

Creating a delightful egg and green onion crepe is all about selecting fresh, quality ingredients that harmonize beautifully.

  • Eggs: The star of this dish! I prefer using large, free-range eggs; they provide a rich flavor and a vibrant yellow color, making your crepes visually appealing too. For the fluffiest result, beat the eggs well before cooking.

  • Green Onions: These add a fresh, mild onion flavor that elevates the dish. Using young, tender green onions ensures a more delicate taste. Chopped finely, they blend seamlessly into the batter.

  • Flour: I use all-purpose flour, which provides the perfect balance of structure and tenderness for the crepes. You could also opt for a gluten-free blend if necessary, while keeping the textural integrity intact.

  • Milk: Whole or low-fat milk adds creaminess to the batter. It creates a lighter texture while enhancing the overall richness of the crepes.

  • Salt: Just a pinch is enough to enhance the flavors. It brings all the ingredients together and ensures every bite is delicious.

By using these key ingredients, you’re on your way to a memorable and satisfying egg and green onion crepe experience!

Tips for Making Perfect Egg and Green Onion Crepe

Creating a truly delicious egg and green onion crepe can feel like an art form, but with a few simple tips, you’ll be flipping perfect crepes in no time!

Choose the Right Pan

When it comes to cooking your crepes, a non-stick pan is your best friend. It ensures that your egg and green onion crepe slides out easily, which is crucial for keeping its beautiful, delicate shape. Make sure the pan is well-heated before pouring in the batter, as this speeds up the cooking and helps create the ideal texture.

Ingredients Matter

Quality ingredients can elevate your crepes dramatically. Fresh green onions provide a vibrant flavor that dried ones simply can’t match. Likewise, using eggs at room temperature makes for a smoother batter and better emulsification, resulting in lusciously tender crepes.

Timing is Key

Cook each crepe for about 1-2 minutes per side. Watch for bubbles to form on the surface, indicating it’s time to flip. Patience is key here; don’t rush the process, or you risk tearing them!

Experiment with Fillings

While the classic egg and green onion crepe is satisfying on its own, feel free to experiment! Consider adding cheese for creaminess or even a hint of chili flakes for a spicy kick.

By following these tips, your egg and green onion crepe will not only impress your taste buds but also those of your friends and family. Happy cooking!

  • Author: Chef John
  • Total Time: 45 minutes
  • Yield: 8 crepes 1x
  • Diet: Vegetarian

Description

Deliciously thin and crispy crepes made with eggs and green onions, perfect for breakfast or as a side dish.

Ingredients

Scale
  • 4 large eggs
  • 1 to 1 1/4 cups water
  • 2/3 cup all-purpose flour
  • 1/2 to 3/4 teaspoon salt
  • 4 green onions (thinly sliced)
  • as needed oil spray

Instructions

  1. Beat the eggs in a large bowl. Add 1 cup water.
  2. Sift the flour into the egg water mixture and add the salt. Use a spatula to stir in the flour. Then use the spatula to press the lumps onto the edge of the bowl to dissolve as much flour as you can. Do not over stir. Then run the batter through a colander and use a spatula to press it through. The lumps will disappear easily. The batter should be very thin, barely coating the back of a spoon, and easily spread out when added to a hot skillet. Add more water if needed.
  3. Add the green onion and mix well.
  4. Spray a 9” cast iron pan or nonstick skillet with a thin layer of oil and heat the pan until hot. Turn to medium heat. Add 1/4 cup of batter to the skillet and immediately swirl the skillet to spread the batter into a thin, round-shaped crepe. You can drizzle a bit more batter into the gaps to patch them up. Cook over medium heat until the bottom side is just set and there’s little wet batter on top, about 30 seconds. Use a spatula to nudge the crepe to test whether it’s set. Flip with the spatula in a swift motion. Cook the other side until just cooked through and tiny brown spots show up, about 20 to 30 seconds. Immediately transfer the crepe to a plate and set aside.
  5. Continue to cook the rest of the crepes in the same manner. If the batter cooks too fast before spreading, lower the heat. If the crepe does not get any brown spots and is very pale, turn to higher heat. Stir the batter during the process because the flour will start to sink to the bottom of the bowl. If the batter becomes too thick to spread, add a bit of water to the batter, mix well and try again.
  6. Serve hot as breakfast or side dish. These crepes are designed to be eaten by themselves. If you want to serve them with toppings, check out this post for pairing ideas. Hoisin sauce and hot sauce go well with these crepes.
