Delicious cheddar potato muffins that are perfect as a side dish or snack.

- 1 ½ cups mashed potatoes
- 1 cup shredded cheddar cheese
- 2 large eggs
- ½ cup sour cream
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped parsley
- 1 tablespoon melted butter (optional)
Instructions
- Preheat oven to 400°F (200°C) and grease or line a muffin tin.
- In a large bowl, mix mashed potatoes, cheese, eggs, sour cream, salt, pepper, and parsley.
- Spoon the mixture into muffin cups, filling nearly to the top.
- Flatten tops gently and brush with melted butter if using.
- Bake for 20–25 minutes until golden and crisp on top.
- Cool for 5–10 minutes, then remove from the tin and serve warm.
