Description

This creamy chicken penne bake is the perfect comfort food, packed with flavors and easy to prepare.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups penne pasta
  • 1 cup jarred roasted red peppers, chopped
  • 1 cup heavy cream (or half-and-half)
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. In a pot of boiling salted water, cook pasta until al dente; drain and set aside.
  4. Heat olive oil in a skillet over medium heat. Sear chicken breasts on both sides until golden brown, about 5-7 minutes per side.
  5. Remove chicken and sauté garlic briefly in the same skillet until fragrant. Slowly stir in heavy cream and half of the Parmesan until smooth.
  6. Combine pasta, sliced chicken, and red pepper mixture in a bowl; mix well.
  7. Transfer to the baking dish and top with remaining Parmesan.
  8. Bake for 25-30 minutes until bubbly and golden. Allow to cool slightly before serving.
