- 4 boneless, skinless chicken breasts
- 2 cups penne pasta
- 1 cup jarred roasted red peppers, chopped
- 1 cup heavy cream (or half-and-half)
- 1 cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Lightly spray a large baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper.
- In a pot of boiling salted water, cook pasta until al dente; drain and set aside.
- Heat olive oil in a skillet over medium heat. Sear chicken breasts on both sides until golden brown, about 5-7 minutes per side.
- Remove chicken and sauté garlic briefly in the same skillet until fragrant. Slowly stir in heavy cream and half of the Parmesan until smooth.
- Combine pasta, sliced chicken, and red pepper mixture in a bowl; mix well.
- Transfer to the baking dish and top with remaining Parmesan.
- Bake for 25-30 minutes until bubbly and golden. Allow to cool slightly before serving.
Notes
- This dish can be prepared in advance and stored in the refrigerator until ready to bake.
