Description

Ingredients

  • 1 medium aubergine (eggplant), diced
  • 2 medium zucchini, sliced
  • 2 bell peppers (red and yellow), diced
  • 4 ripe Roma tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh thyme, chopped
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash and slice all vegetables into uniform pieces.
  3. In a large skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 30 seconds).
  4. Add diced tomatoes, salt, and pepper; cook for 5-7 minutes until saucy.
  5. Layer vegetable slices over the tomato sauce in a circular pattern.
  6. Bake uncovered for 45-50 minutes until tender and slightly charred.
  7. Garnish with fresh basil and thyme before serving.
