- 1 medium aubergine (eggplant), diced
- 2 medium zucchini, sliced
- 2 bell peppers (red and yellow), diced
- 4 ripe Roma tomatoes, diced
- 3 cloves garlic, minced
- 2 tbsp fresh basil, chopped
- 1 tbsp fresh thyme, chopped
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Wash and slice all vegetables into uniform pieces.
- In a large skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 30 seconds).
- Add diced tomatoes, salt, and pepper; cook for 5-7 minutes until saucy.
- Layer vegetable slices over the tomato sauce in a circular pattern.
- Bake uncovered for 45-50 minutes until tender and slightly charred.
- Garnish with fresh basil and thyme before serving.

- For extra flavor, consider adding grated cheese on top before baking.
