Description

A comforting and nutritious beef and cabbage soup, perfect for cold days.


Ingredients

  • 1 lb lean ground beef
  • 1 medium head green cabbage (about 2 lbs), shredded
  • 2 medium carrots, sliced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions until translucent.
  2. Increase heat slightly and add ground beef; cook until browned, breaking it apart as it cooks.
  3. Stir in minced garlic, sliced carrots, and shredded cabbage, cooking until vibrant.
  4. Add diced tomatoes and beef broth; bring to a boil then reduce heat to simmer for about 30 minutes.
  5. Season with salt, pepper, thyme, and bay leaves. Taste and adjust seasonings if needed.
  6. Serve hot and enjoy!
