Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 tsp garlic powder
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • to taste Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast horizontally to create a pocket.
  3. In a bowl, mix chopped spinach, cream cheese, garlic powder, and Parmesan until combined.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks if desired.
  5. Heat olive oil in an oven-safe skillet over medium-high heat; sear each chicken breast for about 4 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).
  7. Let rest for a few minutes before slicing and serving.
