Delicious stuffed chicken breasts filled with spinach and cream cheese.

- 3–4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 1 tsp garlic powder
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil

Instructions
- Preheat your oven to 375°F (190°C).
- Slice each chicken breast horizontally to create a pocket.
- In a bowl, mix chopped spinach, cream cheese, garlic powder, and Parmesan until combined.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks if desired.
- Heat olive oil in an oven-safe skillet over medium-high heat; sear each chicken breast for about 4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before slicing and serving.
