Ingredients

  • 1 tablespoon sesame oil
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 cup beef broth
  • 2 carrots, cut into chunks
  • 2 stalks celery, chopped
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon cold water (optional, for thickening)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Sear the Roast: Preheat a large Dutch oven over medium-high heat. Drizzle in the sesame oil. Season the beef generously with salt and pepper. Sear the roast on all sides until browned—about 3-4 minutes per side. This helps lock in flavor.
  2. Build the Flavor Base: Remove the roast and set it aside. In the same pot, sauté onions, garlic, and ginger until fragrant. This step is essential—the aroma alone will make your mouth water.
  3. Add the Sauce Components: Stir in the soy sauce, brown sugar, rice vinegar, gochujang, and beef broth. Scrape up any browned bits from the bottom of the pot (that’s flavor gold).
  4. Combine and Roast: Return the beef to the pot. Add carrots and celery around it. Spoon some sauce over the top. Cover and roast at 325°F (163°C) for about 3 to 4 hours, or until the beef is fork-tender.
  5. Thicken the Sauce (Optional): Once done, transfer the roast to a cutting board. To thicken the sauce, mix cornstarch with cold water and stir into the pot. Simmer on the stovetop until thickened.
  6. Serve: Shred or slice the beef. Serve with sauce over steamed rice or in lettuce cups. Garnish with green onions and sesame seeds.
