These savory turkey sausage muffins are perfect for breakfast or a snack.
Ingredients

- 1 cup oat flour
- 1 scoop vanilla protein powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large egg whites
- 1/2 cup nonfat Greek yogurt
- 1/2 cup unsweetened almond milk
- 6 turkey sausage patties, cooked and chopped
- 2 tablespoons maple syrup
- 1/4 cup shredded reduced-fat cheddar cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with nonstick spray or use silicone liners.
- In a mixing bowl, whisk together oat flour, protein powder, baking powder, and salt.
- In another bowl, combine egg whites, Greek yogurt, almond milk, and maple syrup. Mix until smooth.
- Add the wet ingredients to the dry and stir until just combined. Fold in chopped turkey sausage and cheddar cheese.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool for 5 minutes before removing from the tin. Serve warm, or store in the fridge for meal prep.
