Description

These savory turkey sausage muffins are perfect for breakfast or a snack.


Ingredients

  • 1 cup oat flour
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large egg whites
  • 1/2 cup nonfat Greek yogurt
  • 1/2 cup unsweetened almond milk
  • 6 turkey sausage patties, cooked and chopped
  • 2 tablespoons maple syrup
  • 1/4 cup shredded reduced-fat cheddar cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with nonstick spray or use silicone liners.
  2. In a mixing bowl, whisk together oat flour, protein powder, baking powder, and salt.
  3. In another bowl, combine egg whites, Greek yogurt, almond milk, and maple syrup. Mix until smooth.
  4. Add the wet ingredients to the dry and stir until just combined. Fold in chopped turkey sausage and cheddar cheese.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool for 5 minutes before removing from the tin. Serve warm, or store in the fridge for meal prep.
