Description

Delicious and healthy chickpea pumpkin blondies made with wholesome ingredients.


Ingredients

Scale
  • 1 1/4 cups canned chickpeas, drained and rinsed
  • 2/3 cup pumpkin puree
  • 1/3 cup pure maple syrup
  • 1/4 cup creamy almond butter
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/3 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Place chickpeas, pumpkin puree, maple syrup, almond butter, coconut sugar, vanilla extract, baking powder, cinnamon, and sea salt in a food processor.
  3. Blend until the mixture is very smooth, scraping down the sides as needed.
  4. Fold in the vegan chocolate chips with a spatula.
  5. Spread the batter evenly into the prepared pan. Sprinkle extra chocolate chips on top if desired.
  6. Bake for 25 minutes, or until the edges are golden and the center is set. Cool completely before slicing into 9 blondies.

Notes

  • These blondies can be stored in an airtight container for up to 5 days.
  • For a nuttier flavor, consider adding chopped nuts like walnuts or pecans.
