Instructions

- Sift flour into the mixture and fold it in with vanilla extract until just combined.
- Pipe small rectangles of batter onto a parchment-lined baking sheet.
- Bake at 340°F (170°C) for 8–10 minutes until edges are golden.
- Let cookies cool completely.
- Melt white chocolate until smooth and glossy.
- Spread a thin layer on the flat side of one cookie and sandwich with another.
- Let set at room temperature before serving or storing.
