  • 3 cloves Garlic (minced)
  • 1/4 cup Soy Sauce
  • 2 tablespoons Lime Juice
  • 2 tablespoons Olive Oil
  • 1 bunch Fresh Cilantro
  • 1 piece Jalapeño
  • 1/2 cup Mayonnaise or Greek Yogurt
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Jasmine Rice
  • 2 cups Water or Chicken Broth

Instructions

  1. In a bowl, mix honey, minced garlic, soy sauce, lime juice, olive oil, salt, and pepper. Add chicken thighs, ensuring they’re well coated. Let them marinate for at least 30 minutes for maximum flavor.
  2. Rinse jasmine rice under cold water until the water runs clear. Cook according to package instructions, using water or chicken broth to enhance the flavor.
  3. In a blender, combine fresh cilantro, jalapeño, mayonnaise or Greek yogurt, lime juice, salt, and pepper. Blend until smooth, adjusting consistency with a bit of water if necessary.
  4. Heat a skillet over medium-high heat. Remove chicken thighs from the marinade (reserving the marinade) and sear for 6-7 minutes on each side until golden brown and cooked through.
  5. Pour the reserved marinade into the skillet with the cooked chicken. Let it simmer for 2-3 minutes, allowing the honey glaze to sticky up and coat the chicken beautifully.
  6. Serve fluffy jasmine rice on plates, topped with the glazed chicken thighs. Drizzle generously with the zesty green sauce and garnish with extra cilantro or lime wedges.
