Description

Delicious cookies topped with caramel and chocolate, perfect for a sweet treat.


Ingredients

Scale
  • 1/2 cup butter (salted, 111g)
  • 1/2 cup granulated sugar (115g)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (228g)
  • 1 tsp baking powder
  • 20 caramels (unwrapped)
  • 1 tbsp milk (for caramel)
  • 2 cups milk chocolate chips (400g)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Add the egg white and vanilla extract. Mix until well combined.
  4. Gradually mix in the flour and baking powder until fully incorporated.
  5. Roll the dough out to 1/4–1/2 inch thick. Use a round cookie cutter to cut out circles. Place on an ungreased baking sheet.
  6. Bake for 6–8 minutes until cookies are puffy and no longer glossy. Transfer to a wire rack to cool completely.
  7. While cookies cool, microwave caramels and 1 tablespoon milk in 30-second intervals, stirring at each interval until smooth.
  8. Spoon a few teaspoons of caramel onto each cookie, spreading nearly to the edges. Chill in the fridge for 10–15 minutes until set.
  9. Melt chocolate chips in 30-second intervals, stirring between, until smooth. Spread a small layer of melted chocolate over each cookie. Let chocolate set before serving.

Notes

  • For best results, use room temperature butter.
  • Feel free to add nuts or sprinkle sea salt on top before letting the chocolate set.
