Description

Delicious protein bites made with rolled oats and Greek yogurt, perfect for a quick snack.


Ingredients

  • 1 cup rolled oats
  • 0 cup cream cheese (softened, plant-based cream cheese can be used for dairy-free)
  • 1 cup Greek yogurt (plain)
  • 0 cup protein powder (vanilla flavor recommended)
  • 0 cup fresh blueberries (gently folded in)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • a pinch salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, softened cream cheese, Greek yogurt, protein powder, honey or maple syrup, vanilla extract, and salt. Mix until fully combined.
  2. Gently fold in the fresh blueberries, being careful not to mash them.
  3. Scoop about one tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet and repeat with the remaining mixture.
  4. Refrigerate the protein bites for 30 to 60 minutes, or until firm.
  5. Once chilled, serve immediately or store in an airtight container in the refrigerator.
