Description

Delicious potato cakes made from leftover mashed potatoes, perfect as a snack, breakfast, or side dish.


Ingredients

  • 2 cups Mashed Potatoes
  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Chopped Green Onions
  • 1/2 cup Shredded Cheese
  • 3 tablespoons Butter (or olive oil)

Instructions

  1. In a large mixing bowl, combine your mashed potatoes, all-purpose flour, baking powder, salt, and black pepper until a soft dough forms.
  2. Fold in chopped green onions and shredded cheese until evenly distributed throughout the mixture.
  3. Transfer dough to a floured surface, divide into eight equal portions, and shape into patties, about ½ inch thick.
  4. Lightly dust each patty with flour for a crispier texture when frying.
  5. Heat a skillet over medium heat and add enough butter to coat the bottom.
  6. Fry each cake for 4-5 minutes on one side until golden brown, then flip and fry the other side.
  7. Remove the cakes using a slotted spatula and place them on paper towels to drain excess grease.
  8. Serve warm as a snack, breakfast, or side dish.

Notes

  • Leftover mashed potatoes work perfectly for this recipe.
