A delicious creamy pasta dish with chicken, sun-dried tomatoes, and spinach.

- 2 boneless skinless chicken breasts
- 8 oz penne pasta
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Boil salted water and cook penne pasta until al dente. Drain and set aside.
- Slice chicken breasts into bite-sized pieces. Season with salt, pepper, and Italian seasoning.
- Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and sear until golden and fully cooked. Remove from pan and set aside.
- In the same pan, sauté minced garlic for 30 seconds. Add sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and bring to a light simmer. Stir in parmesan until melted and creamy.
- Return cooked chicken to the pan. Add spinach and stir until wilted.
- Toss in cooked pasta and mix well. Adjust seasoning and add red pepper flakes if desired.
- Serve hot, garnished with fresh basil or extra cheese if preferred.
Notes
- This dish can be topped with additional parmesan cheese or fresh herbs for extra flavor.
