Description

Ingredients

  • 4 cups chopped green cabbage (about 1/2 medium head)
  • 2 cups Fritos corn chips (original flavor)
  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 1 bell pepper, diced (any color)
  • 2 tablespoons taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (optional)

Instructions

  1. Prepare your ingredients by washing and chopping the cabbage into bite-sized pieces.
  2. In a skillet over medium heat, sauté the diced onion and bell pepper in a drizzle of oil until soft, about 5 minutes.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks (about 7 minutes).
  4. Stir in taco seasoning until well combined.
  5. Fold in the chopped cabbage, cover the skillet, and steam for about 10 minutes until wilted but still vibrant.
  6. Remove from heat and sprinkle shredded cheese over the top; let it melt slightly before serving.
