- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/3 cup freshly grated Parmesan cheese
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 tablespoons chopped fresh parsley (plus more for garnish)
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for a kick)
- Wooden or metal skewers
Instructions
- In a large mixing bowl, whisk together the olive oil, garlic, Parmesan cheese, parsley, Italian seasoning, salt, black pepper, and red pepper flakes (if using) until well combined.
- Add the chicken cubes to the bowl and toss until each piece is coated in the marinade.
- Cover and refrigerate for at least 30 minutes (up to 2 hours) for maximum flavor.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread marinated chicken pieces onto the skewers, spacing them slightly apart for even cooking.
- To Grill: Preheat your grill to medium-high heat (about 400°F). Grill skewers for 10-12 minutes, turning every 2-3 minutes, until chicken is golden and cooked through (internal temp 165°F).
- To Bake: Preheat your oven to 425°F. Place skewers on a parchment-lined baking sheet and bake for 15-18 minutes, flipping halfway, until chicken is cooked through and lightly browned.
- Sprinkle with extra chopped parsley and more grated Parmesan if desired. Serve immediately and enjoy!

- You can adjust the amount of red pepper flakes to suit your spice preference.
