Description

Delicious grilled chicken skewers marinated in olive oil, garlic, and Parmesan cheese, perfect for outdoor gatherings.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley (plus more for garnish)
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for a kick)
  • Wooden or metal skewers

Instructions

  1. In a large mixing bowl, whisk together the olive oil, garlic, Parmesan cheese, parsley, Italian seasoning, salt, black pepper, and red pepper flakes (if using) until well combined.
  2. Add the chicken cubes to the bowl and toss until each piece is coated in the marinade.
  3. Cover and refrigerate for at least 30 minutes (up to 2 hours) for maximum flavor.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread marinated chicken pieces onto the skewers, spacing them slightly apart for even cooking.
  6. To Grill: Preheat your grill to medium-high heat (about 400°F). Grill skewers for 10-12 minutes, turning every 2-3 minutes, until chicken is golden and cooked through (internal temp 165°F).
  7. To Bake: Preheat your oven to 425°F. Place skewers on a parchment-lined baking sheet and bake for 15-18 minutes, flipping halfway, until chicken is cooked through and lightly browned.
  8. Sprinkle with extra chopped parsley and more grated Parmesan if desired. Serve immediately and enjoy!
