Description

Ingredients

  • 2 medium zucchinis, sliced lengthwise
  • 2 cups cooked white rice
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/3 cup sour cream
  • 1 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat grill to medium-high heat. Brush the steak and zucchini slices with olive oil and season both sides with smoked paprika, garlic powder, salt, and black pepper.
  2. Grill the steak for 4–5 minutes per side, or until desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.
  3. Grill zucchini slices for 2–3 minutes per side until tender and lightly charred.
  4. In a small bowl, whisk together sour cream, mayonnaise, lemon juice, and chopped parsley to make the creamy sauce. Season with salt and pepper to taste.
  5. To assemble, divide cooked rice among bowls. Top with sliced grilled steak and zucchini. Drizzle with the creamy sauce and garnish with extra parsley if desired.
