- 1 lb flank steak
- 2 medium zucchinis, sliced lengthwise
- 2 cups cooked white rice
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1/3 cup sour cream
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat grill to medium-high heat. Brush the steak and zucchini slices with olive oil and season both sides with smoked paprika, garlic powder, salt, and black pepper.
- Grill the steak for 4–5 minutes per side, or until desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.
- Grill zucchini slices for 2–3 minutes per side until tender and lightly charred.
- In a small bowl, whisk together sour cream, mayonnaise, lemon juice, and chopped parsley to make the creamy sauce. Season with salt and pepper to taste.
- To assemble, divide cooked rice among bowls. Top with sliced grilled steak and zucchini. Drizzle with the creamy sauce and garnish with extra parsley if desired.
