Description
A refreshing salad with green beans, kidney beans, chickpeas, and a zesty dressing.
Ingredients

- 1 cup green beans, trimmed
- 1 cup kidney beans, drained and rinsed
- 1 cup chickpeas, drained and rinsed
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Blanch the green beans in boiling water for 3 minutes.
- Drain and cool the green beans in ice water.
- In a large bowl, combine the green beans, kidney beans, chickpeas, red onion, and basil.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Chill for at least 30 minutes before serving.
