  • 2 cups low sodium beef broth
  • 10 ounces rotini pasta, (about 3 cups)
  • 4 ounces cream cheese
  • 2 cups Colby cheese or cheddar (shredded)
  • Cilantro, fresh diced tomatoes, jalapenos (optional)

Instructions

  1. Heat a large skillet on medium-high heat and add the ground beef. Brown for 2-3 minutes then add in the diced onions and continue cooking until no longer pink. Drain any extra fat.
