- 4 sweet potatoes (scrubbed and cut into thick matchsticks)
- 2 tablespoons cornstarch
- 4 tablespoons olive oil
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper (to taste)
Instructions
- Place the sweet potatoes in a large bowl and cover with cold water. Let them sit for 30 minutes.
- Meanwhile, preheat the oven to 450°F.
- Drain the water and pat the potatoes dry.
- Sprinkle the sweet potatoes with cornstarch, olive oil, paprika, and garlic powder. Toss to combine.
- Transfer the potatoes to a baking pan, making sure they are in a single layer.
- Bake for 18 minutes. Flip the potatoes over and bake for 10 more minutes or until crispy and done.
- Remove from the oven and sprinkle with salt and pepper to taste.

- For extra crispiness, ensure that the sweet potatoes are dry before adding oil and seasonings.
