  • 8 oz chow mein noodles (fresh or dried)
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Prepare your ingredients by slicing chicken and chopping vegetables into bite-sized pieces.
  2. Boil chow mein noodles according to package instructions until just tender. Drain and toss with a little oil to prevent sticking.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until golden brown.
  4. Add bell peppers, carrots, snap peas, garlic, and ginger to the skillet. Stir-fry for another 3-4 minutes until veggies are vibrant yet crisp.
  5. In a small bowl, whisk together soy sauce, oyster sauce, and cornstarch mixture. Pour over the chicken and vegetables.
  6. Add cooked noodles to the skillet and toss everything thoroughly for an additional minute or two until heated through.
