A quick and delicious stir-fry featuring tender chicken and vibrant vegetables tossed with flavorful chow mein noodles.

- 1 lb boneless, skinless chicken breasts, thinly sliced
- 8 oz chow mein noodles (fresh or dried)
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp cornstarch mixed with 2 tbsp water
- 1 tbsp vegetable oil (for cooking)
Instructions
- Prepare your ingredients by slicing chicken and chopping vegetables into bite-sized pieces.
- Boil chow mein noodles according to package instructions until just tender. Drain and toss with a little oil to prevent sticking.
- Heat vegetable oil in a large skillet over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until golden brown.
- Add bell peppers, carrots, snap peas, garlic, and ginger to the skillet. Stir-fry for another 3-4 minutes until veggies are vibrant yet crisp.
- In a small bowl, whisk together soy sauce, oyster sauce, and cornstarch mixture. Pour over the chicken and vegetables.
- Add cooked noodles to the skillet and toss everything thoroughly for an additional minute or two until heated through.
Notes
- For a vegetarian option, substitute chicken with tofu.
- Adjust the soy sauce and oyster sauce to taste.
- Feel free to add other vegetables like broccoli or mushrooms.
