A delicious creamy chicken and gnocchi dish that’s perfect for any occasion!
Ingredients

- 1 lb chicken breast
- 16 oz potato gnocchi
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 cup baby spinach
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil and butter in a skillet over medium heat. Sear chicken until golden and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds.
- Add gnocchi, heavy cream, and sun-dried tomatoes. Simmer 4–6 minutes until gnocchi is tender.
- Slice the chicken and return to skillet. Stir in spinach until wilted.
- Add parmesan and mix until melted and creamy.
- Garnish with fresh parsley and more parmesan. Serve hot.
Notes
- This dish can be served with additional parmesan on top.
- Store leftovers in an airtight container in the fridge for up to 3 days.
