Description

A delicious creamy chicken and gnocchi dish that’s perfect for any occasion!


Ingredients

Scale
  • 1 lb chicken breast
  • 16 oz potato gnocchi
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup baby spinach
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil and butter in a skillet over medium heat. Sear chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds.
  4. Add gnocchi, heavy cream, and sun-dried tomatoes. Simmer 4–6 minutes until gnocchi is tender.
  5. Slice the chicken and return to skillet. Stir in spinach until wilted.
  6. Add parmesan and mix until melted and creamy.
  7. Garnish with fresh parsley and more parmesan. Serve hot.

Notes

  • This dish can be served with additional parmesan on top.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
