Description

Delicious and healthy cookies made with oats, peanut butter, banana, and zucchini.

Ingredients

Scale
  • 2 cups rolled oats
  • 1/2 cup peanut butter
  • 1 1/4 cups banana, mashed (approximately 2 1/2 large bananas)
  • 1/4 cup zucchini, shredded and moisture removed

Instructions

  1. Preheat the oven to 180C/350F. Line a large baking tray with parchment paper or use a cookie sheet.
  2. Shred the zucchini and squeeze out all the excess moisture using a paper towel or cheesecloth.
  3. In a large mixing bowl, add the oats, peanut butter, mashed banana, and zucchini and mix well. If using chocolate chips, fold them through at the end.
  4. Form 16 balls of dough with the batter and place them on the lined tray. Press each one into a cookie shape.
  5. Top with extra chocolate chips and bake for 12-15 minutes, or until golden on the edges.
  6. Allow cooling on the tray for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Ensure the zucchini is well-dried to prevent sogginess.
  • Substitute peanut butter with any nut or seed butter of choice if needed.
